We are doing a Saturday to Saturday trip the first week of March and are thinking the below itinerary.

We are wondering which day we should do Epcot on Monday or Wednesday and swap with MK?

Wednesday will also be the first day of the Flower and Garden festival. But it's not like we have to be there for the first day. I've heard that MK is busiest on Mondays but will Epcot be busy on Wednesday for the first day of F&G?

Wed - MK
Thu - Rest

If you are staying at a Deluxe resort you might want to factor in Extended Evening Hours for Deluxe guests. Typically those are Monday for EPCOT and Wednesday for MK (outside of holiday party season).

The first day of an Epcot festival can be crowded, especially with all the local vloggers getting their content to post online. I usually try to avoid the first day if I can.

I don’t know that MK is busier on Monday these days than any other day. It used to be that most people took a week of vacation, spent a couple of days driving down to Disney, and they all arrived Sunday night anxious to head to MK first thing. There are four parks now and people often take shorter trips, arriving any day of the week, and they don’t necessarily head to MK first anymore but go to their favorite park instead. So the no Monday at MK isn’t as crucial as it used to be.

If it were me, and I wanted to see the F&G festival, I would swap Epcot and AK, leaving MK on Wednesday. Another option would be to shift your rest days up one day, so HS, rest, MK, rest, Epcot, AK. That puts your MK day on Tuesday and Epcot on Thursday. But do what works best for your family, since you know them better than we do.
