My favorite moderate resort is Coronado Springs. Love the theming and dig site pool. There is a wonderful full service restaurant on the property called Maya Grille.
My second favorite is CBR. I hear they've renovated which is a good thing. I've never had the urge to stay at Port Orleans...either section. Probably because I live in the South so the theming doesn't appeal to me.
I think you'll be happy at any Disney moderate resort.
