Mock Kahlua (this one's for you, glo)

2 1/2 cups water
3 cups Splenda
3 tablespoons instant coffee crystals
1 teaspoon vanilla
1 bottle (750 milliliters) 100 proof vodka (use the cheap stuff)

1. In a large pitcher or measuring cup, combine the water, Splenda, coffee crystals, vodka and vanilla. Stir until the coffee and Splenda are completely dissolved.

2. Pour the mixture through a funnel into a 1.5 or 2 liter bottle. ( a 1.5 liter wine bottle works fine as long as you saved the cork)

<i>Yield:</i> 32 servings of 1 1/2 ounces (standard shot). Each will have 2 grams of carbohydrates, no fiber and the merest trace of protein.

<b>Now</b> you can have a kahlua and cream if you want :)

I wonder if you could blend it with skim milk and ice and come up with a frosty treat?

Looked up that margarita mix on the Atkins site and it sounds like a great replacement for the sugary mixes they sell in the stores. I can't wait for your shipment to arrive so you can test it for us.

Just my luck. DH is in training in Dallas this week. The airfare was too high for me to join him (over $450!!) If I had gone with him, I could have stolen the rental car and tried to meet with you and KathyTX for some WISH cocktail research! Drat!!!
 
Dana Carpender (I got this from her cookbook) doesn't say anything about refrigerating this.

When I have vodka in the house, I usually keep it in the freezer. I imagine that would work alright for this too, I don't think there is enough water in it to cause it to freeze. If you kept it in the freezer then it would make a silky frozen drink, I think and not cause any ice to melt too quickly.
 

Sounds so Yummy -- but I'd probably be the only one drinking it --- and the lush that I am -- I'd drink the entire batch! I rarely drink -- but when I do, I usually choose sweet drinks and have a difficult time putting them down! Couldn't have anything to do with sugar addiction, could it?:rolleyes: I wonder if I could break down the recipe to make just a couple shots at a time?
