Changing reservation from 4 to 3 people.

Our family of 4 has a WDW trip planned for September 2026. However, our daughter just got accepted to the Disney College Program starting in August, so we really won't know what meals she will be able to join us for until she gets her work schedule for the week. Can / should I just book all of our meals for 4 people and then just modify the reservation to 3 people as necessary when we know her schedule? Do restaurants generally allow this?

Just book everything for 4. I wouldn't even modify it down to 3 unless it was a prepaid meal.

Yes, they won't penalize you if you show up with three. A party of three would have to be seated at a four-top in most cases anyway. It won't be a problem.
