Is there a good place to view the castle projection where the fireworks aren't too loud? My kids really don't like loud noises but we will want to see the castle show. I could bring noise cancellation headphones and rent a locker I guess? Any other ideas or anyone who's had this issue?

Celebrate the Magic (the castle projection) happens before the fireworks start. You would have time to move away from a closer viewing spot. If you do not want to see Fireworks at all, just head away into Adventureland or Tomorrowland, where the booms will be less prominent. Do not go into Fantasyland, as they are the loudest there. I'd recommend hanging out near Casey's Corner to watch CTM then heading to Adventureland if you want to skip Wishes. If you do want to see the fireworks, you can watch the fireworks from the Swiss Family Treehouse a distant and quieter view (the music won't be as easily heard though). You could also move further back down Main Street, but crowds might make that difficult.

My DS hates loud noises, we bring ear plugs for him and it works great.
My DH has those little orange foam ones for work, they fit in our pocket until it's time to put them in.

The fireworks are set off from every direction. I just bring ear plugs, the soft ones that you can get at the pharmacy. It depends upon your children sensitivity level. My niece who hates loud noises got over it really quickly because she wanted to see the show.
