MK am EMH on a 6/10 crowd day or no EMH 3/10 day - only in parks til 1230

Hi,
I was hoping to take advantage of all the am EMHs because my toddler is an early riser and early napper. We can only comfortably be in the parks til 12 or 1230 before he melts down. We are going Oct 25-30, so the parks don't open til 9. That only leaves us 3 hours each am without EMH. Questions:

1) Would you choose MK am EMH on a Monday with touringplans.com predicting 6/10 for the crowd levels OR MK Tuesday rope drop 3/10 crowds? I hate the idea of only touring 9-12, but if the difference in crowds means that an extra hour will simply get eaten up in line, then there's no point going on a more crowded day. Keep in mind we won't be riding headliners (DS too short) and will spend at least one more AM at MK. We won't come back in the evenings most likely.

2) right now our plan is SunPM - Epcot Mon- HS Tu- MK W- AK Th- MK. Part of me wants to drop HS so that we can spend more time at MK and do SunPM - MK Mon - Epcot Tue - MK W - AK Th- MK (all depending on whether we do MK on M). If you had two year old who loves rides, isn't too keen on loud noises, would you skip HS entirely to have 3-4 more hours at MK?

3) If you had to pay out of pocket for one TS meal in all of Disney to celebrate your 30th bday, where would you choose? :bday: We've downgraded to TS after upgrading fr Pop/DDP to a Cars suite and may forego the dining plan entirely if a good RO discount comes out.
 
Following bc I have the exact same conundrum: MK EMH on Monday or MK low crowds party day on Wednesday (November). This is our first trip with a child, and with the FP+, so not sure how that changes things. I know that when we were just DINKS, before FP+, we found that hour of EMH was awesome even on a busy day. We accomplished *so much* before lunch.

You don't say if your TS can include signature or if it will be sans or with kiddo, so I'll list all of those :)

Dream, no kids: V&A for sure!
Signature w/ child: Flying Fish, Narcoossees
TS: Boma, Coral Reef or one of the new DTD restaurants that I honestly can't remember the name of right now ;)

I didn't include California Grill bc though I've always wanted to go myself, I've been reading so many mixed reviews lately :(
 
Definitely will be with kiddo for the meal, so no V&A :) thanks for the suggestions! I think I'm going to do MK Mon am, and if it's super packed, we can just go again Tues and Thurs. If we get what we want done, we'll go to HS on Thurs.
