Mixology class, cooking class... how and when do you book these?

I heard that there are classes and stuff to sign up for. Are these some of the things that show up 75 days before sailing? (we are not CC) I'm confused on how and when to sign up for stuff.

You sign up for these offerings once you board the ship. Your navigator will tell you where to go - either guest services or a bar/restaurant & when they are offered.

Also, if you are in a meet group, they may coordinate a mixology class beforehand. In my group, they just needed the participants cabin number and number of participants and the cost would be added to your portfolio on board.
 
Mixology you can signup for on the first day of the cruise. I believe you just show up for the cooking classes. Look at the personal navigator (paper itinerary) when you get to port, it will tell you where to go to signup.
 
If you are in a group (Group Cruise meet) you can email DCL prior to sailing and reserve for your group.
A minimum of 25 guests to a maximum of 35 guests/adults per class/session (Depending on which class/tasting), and the appropriate fee per person and each participant will be charged automatically to their onboard account whether they show-up or not.
You will need to provide each guests full name and stateroom number or reservation number at least 2 weeks prior to sail date. You can also request for the time and dates you prefer.

On embarkation day head to the Guest Services and ask them what alcohol tasting they offer on board and they will give you a ticket. It is also indicated in the navigator.
 

Not to take over the board but how much are the tastings? Can't find accurate lists of what's offered and prices so I can budget

Yes. Sometimes. You don't do the cooking. There's usually a chef in the front of the room showing how something is prepared, and then there a little samples (pre-prepared) that are handed out at the end for everyone to taste it.
 
With the cooking classes you don't sign up and there is no charge. These tend to be on Sea Days at around 10am and as said, you have a premade sample of food and a splash of accompanying wine. They are adult only activities but no need to prebook.

Mixology is fab (had lots of different style ones and enjoyed them all). Definitely sign up early and if you can get one coordinated through a group then do that as they are so enjoyable.
