I know its a buffet dinner, but I thought I read somewhere that you may only fix yourself one plate during the meal. What if you want to try some of everything and can't fit it all on one plate? Or did I miss understand?

You can have more than one plate. I think they say it's not all you can eat to avoid having people sit at the restaurant all day.

It's a buffet so you can fix as many plates as you wish. In the details for the buffet page there is usually information that if you special order a kosher meal, you will receive only one meal (i.e. one plate) and that the kosher meal will not be all you care to eat so that might be what you are recalling.
