I don't believe there is a minimum for the carving station. We were never told anything like that. We got down to 39 guests and had one. I'm not sure about the pricing, because ours was part of our buffet menu (which was the Floridian buffet menu I believe, at about $99/head).
I think for something so intimate a simple plated meal would be just fine. I think the smallest carved beef feeds something like 20 people. That may make your meal VERY expensive.

We have to have a buffet because DH and I cannot agree on what to serve.
I just think a carving station is overkill. My DH on the other hand, loves the idea of fresh carved meat. I tried to get away with pasta and chicken but DH is insistant on some kind of beef.
Me? just give me some pasta and dessert and I am one happy girl.
Maybe you should talk to my DH. He seems to think we need some cornucopia of food. Now if it were my family, I would understand because we LOVE food. But his does not make it that much of their lives.
In his defense, we do need to hit a $750.00 minimum for F&B so I can cut him a little slack. $750.00 might be a little difficult for 11 people, 5 of which are kids. I would rather have people eat more than drink more booze.
All I really would've needed was our cake and I would've been happy. SO GOOD!
We felt the same way about food vs. booze. When we were under our minimum before tax and service charges, we added appetizers. The only thing we did booze-related was go from call brands to premium brands.
