We will have tickets with the "And more" option. We will check into our hotel around 6pm our first night in Orlando. Is it possible to do the mini golf or another "and more" option that first evening?? I don't want to waste a park day that night.

Yes, you can use your tickets as soon as they are 'active' which, if you are staying at a Disney hotel and they are linked to your MagicBand, will be as soon as you have checked in.
ETA: Actually, having checked, the mini golf use is only valid before 4pm so you won't be able to use it that first evening. You could go to Disney Quest at DTD though.
