Once my new dvc purchase closes, I'm hoping to take a spring break vacation mid-March. I'm thinking room availabilty may be hit and miss this late in the game, so my question is about moving between rooms/resorts mid stay.

Does Disney help out in the move at all? Or is it a check out, then travel to the new resort, and check in? If I do have to make a mid week move or two, I'm hoping it will be as painless as possible.
 
It will have to check out by 11:00 am and check in at the new resort. Your room may or may not be ready, so you are homeless for a while.

Disney will take care of the luggage. Bell service will move your luggage to the new resort and the will bring it to the room when you get in the room. Tip of 1 to 2 dollars per bag is the norm at pick up and drop off.
 
There are many that do transfer mid-trip. It is, technically 2 reservations with seperate check-in and check-out. (i.e even DDP would be 2 seperate DDP's)

Bell services can transfer your luggage from one resort to another, but you have to be in your room to get your luggage delivered into your room. I think the transfer day is best used as a pool day (at the new resort).
 
If you wish you can have Bell Service transfer your luggage between resorts. You still check out of your first resort and then find your way to the second resort to check in. Your luggage should make it to the next resort by 4PM. No fee for this other than the tips to the bell service people.
 

Yes you do need to check out and then check in at the next resort. Bell Services will handle moving your luggage from one resort to another. There's also a good chance you'll be without a room for the day since check in isn't until 4PM if your room isn't ready when you're checking in. Not too bad of a process, but it does take some time out of your day.
