Hell Everyone!
I was wondering if anyone was ever able to get there hands on the recipe for Disney's Macaroni & Cheese. We had some at Chef Mickey's in July and it was probably the best Macaroni and Cheese I have ever had.
I think I saw a special on the Travel Channel too about how Disney's Chef's brought kids in to taste test the Macaroni and Cheese and it's the recipe the use throughout the whole Disney property...I thought it may be impossible to get a hold of that exact recipe, but on these boards, you never knoe what you may find, right?

Here is one I have from Jiko. Unfortunately, it doesn't give exact measurements for the cheese.



Macaroni & Cheese

Jiko
Animal Kingdom Lodge


YIELD: 10 servings

Ingredients:

Mornay Sauce
1/8 pound butter
1/8 pound flour
1/4 gallon milk
1/8 bag Quattro Formaggio (four-cheese mixture)
Salt to taste

1 lb. elbow macaroni


Method:
Prepare the macaroni according to the directions on the package.
Make a roux with the flour and butter. Bring the milk to a simmer and work in the roux.
Add cheese and salt to taste. Pour over the macaroni and heat through in a moderate oven.
 
This is basically the same way I've made my mac & cheese for years - except that I stopped measuring after the 1st time. ;) Also, I use whatever cheese is available (including buying cheese "ends" from the deli really cheap! - but my favorite is really sharp cheddar) and I like to bake mine at 350 until the top starts to brown. (The browned part is my favorite! ;) )

Just in case you don't know what to do with pounds & gallons instead of Tablespoons & cups . . . .

4 Tbl butter
1/2 c flour
4 c milk

for the cheese - I seriously doubt that they're talking about the size bag of shredded cheese most people can buy in the grocery store. They're usually 2 or 4 cups. Depending on how much cheese I have or how cheesy I want it to be, I use about a pound...but we like it really cheesy. Your best bet is probably to start with much less & taste it - especially if you're using shredded cheese...it won't take long to melt when you add more.

Thank you so much for the recipe and the advise on the cheese amount and how to convert the recipe into cups instead of pounds. It's funny because my Mom and I went to Jiko on our trip in 2002 and I got a steak that was served over amc & cheese and it was awesome....so i am looking forward to trying this recipe out. The only thing I have never heard of is the Quattro Formaggio, but I will search for it.

I've seen the cheese in some of the more upscale grocery stores around here...not the one that caters to our old-school PA Dutch families. It was in the section with the shredded cheeses & I believe it was by Maggio??

PotC is our favorite, too! I still haven't seen it either. I can't wait until it's out on DVD!
 
The only thing I have never heard of is the Quattro Formaggio, but I will search for it.

Sargento makes a 4 cheese Italian blend that might work well in this recipe. It includes Asiago, Mozzarella, Parmesan and probably Romano.
