Mexico in Epcot has San Angel Inn.

I think San Angle Inn is it. The Cantina outside San Angle is a counter service.

Paradiso 37 at Downtown Disney also has several Mexican/Latin/South American items on their menu. The name of the restaurant refers to the 37 countries of North and South America.
