Mexican Food

We will be visiting WDW at the end of April. My boys are 3,5,& 8. We've planned all the meals, but would love to add a mexican meal. I'm looking for something simple with almost a "tex mex" style. The boys only like enchiladas, tacos, refried beans, etc. any suggestions?? I guess im saying nothing TOO authentic...any ideas??? We are doing the dining plan too. Thanks!!

The Maya Grill at the Coronado is incredible, they have great TexMex food (although the Dis menus do not reflect that) and live music! Totally worth going out of your way for
