AT WDW operated restaurants--returned to full menus or still in Virus mode?

I'd say in between, nothing is fully back to normal, still some supply issues and inflation issues. You can look at the menus and see for yourself.

But don't expect that everything will be there when you're there. I mean, there was no lemonade at Yak & Yeti when we were there in May.

Menus are expanding slowly based on availability of ingredients and of culinary staff to prepare them. As above, monitor the menus via the Disney website.

They had lemonade last weekend fyi. Also had expanded menu options that were not on the Disney menu. They said it takes awhile to update the Disney menu

Agree with in between. When we were there last fall in October, the menus were very slim in offerings. Our trip in April, showed more options, but not to pre- Co-Vid level.
