Menus and dinner cutoff questions

After reviewing the menus on allears.net, I've realized that I like most of the lunch menus more than I like the dinner menus. However, it's unlikely that we'll be eating table service meals later rather than earlier. This leads to several questions:

1) What is the "cutoff" between lunch at dinner in the table service restaurants? Does each restaurant set its own time, or are all WDW restaurants on lunch or dinner at the same time?

2) Can you order off the lunch menu at dinnertime?

3) Most menus seem to have only 6-8 main entrees at each meal. This seems somewhat limited compared to restaurants outside WDW (have you ever been to the Cheesecake Factory? Their menu is like a novel). Are the menus on allears fairly representative of what you'll usually find there? How often do they add/subtract stuff from these menus?
 
I'll do my best to answer...

1. Most restaurants start serving dinner around 4pm. Some may close for a couple of hours before dinner and others may do a casual change from lunch to dinner.

2. It really depends on the restaurant, the server, and the chef as to whether or not they will let you get something from the lunch menu. Most of the time, however, I would say no.

3. The menus at most Disney restaurants change fairly frequently, with a few standbys always remaining. Most of the menus are limited due to the large number of people being served. Generally, there will be one chicken dish, one steak dish, etc. The menus on allears are pretty representative, give or take a few items.
