Menu Tasting Question

So I am filling out our menu tasting worksheet, which will take place at the Boardwalk since our reception is at ADH. We will be doing a welcome dessert party in Epcot the night before our wedding. I want to do a custom menu with some non-standard items. If we request it at our menu tasting, it won't be the Epcot chefs who will be making it the day of the event. I also don't think we'll have enough room to request the desserts (it says we can only request to try 8 things total). Any advice? There's probably not a chance we'd get a separate menu tasting with the Epcot chefs, but I really want to talk to the chef and get some more creative items on the menu.
 
Hmm, maybe Ashley can help you when she gets back, since her reception is at ADH and shes having a welcome dinner in Epcot also! We had our tasting at the Boardwalk also and I think they only give you 8 options because they will give you full plates of everything. We used the entire time trying those things (they cook them right in front of you) and wouldnt have had time to try anymore during the time they allow for. We tried 3 apps, salad, a 1st course and three meal options I think. We had Charles who I believe is the Boardwalk chef and he's very personable. He did tell us people have multiple tastings when they can't make up their mind, so maybe they will let you have more than one?
 
I think if you're really concerned about how the desserts will taste, and they do allow multiple tastings, it would be better to request one at Epcot for that. As you say, the BoardWalk won't be making your desserts, and the quality (and even recipes, it seems!) does vary. I've had the same desserts made by Epcot and by DHS, and the difference in quality was striking.

If you just want help brainstorming, I'll bet the DISers here can help you out. Theoretically you can ask for anything, so if you've seen things you like in magazines/restaurants or have a family recipe you want incorporated, you could ask about getting that on your menu at Epcot.
 
I heard from our planner's assistant, and she said there would be a fee to do a second tasting, but that we could work with the Epcot chef's via email to come up with a menu. I'm okay with being surprised I guess lol. I'm mostly looking to do things that I've seen at the special Food and Wine Festival dessert events, so I know the Epcot chefs can do it.

It's too bad we are not doing our PS's at the same time, since we have the opposite dilemma. Our tasting is in the Epcot Kitchen for our reception, but there is stuff we want to try at BW for our Welcome Dinner. If we were going at the same time, we could go to each other's. :)
