There is a group of us going on the Disney Magic in August. Some of us have not met others in the party so my friend is having a "bon vogage" party a week before we leave. Since she's having the party at her house I told her I would do alot of the cooking (because I REALLY love to cook!). Any suggestions, with or without recipes, would be greatly appreciated. It's not really a dinner party more like a cocktail party so I really just need finger foods. We're on the western itinerary so we will be going to the Caribbean and Mexico and that is our theme. Thanks for any help!!!!!
 
I have this little cookbook on appetizers and it offers this advice at the beginning of the book:

"As a general rule , allow six to eight different appetizers for the first 24 people, adding another selection for every 10 to 12 people. This is just a general guide. The appetite of your guests and the time of day or time of year can substantially affect how many appetizers you want to serve. People tend to eat more when the weather is cold and drink more when it's hot. Also guests will probably eat less at a mid-afternoon party than one scheduled for early evening."

"Think about flavor variety. If you don't know what kind of food appeals to your guest, include at least a few mildly flavored appetizers."

"With today's concern about fat and calories, offer at leat one appetizer that will appeal to diet watchers."

I will check some of my recipes, and re-post if I find some that would be good for your theme.
