How crowded is it? We have a cruise that embarks May 25 (Memorial Day proper), and were thinking of flying down the 23rd and doing 2 nights prior at Universal/IoA. But I just realized it's the holiday weekend. Will it be insane?

With Diagon Alley open during that time I expect a large increase in crowds for a holiday weekend. It will be very busy.
