Can I put together my meatloaf (seasonings, eggs, etc) but then freeze it instead of cooking it?? I'm making a huge meatloaf right now, but it occurred to me that maybe I shouldn't cook all of it right now. Can I cook half for tonight's dinner and then freeze half and cook it next week??

Yes- it is an easy make ahead meal.- As long as the ground beef wasn't frozen before (you can't unfreeze and refreeze uncooked beef).

Cooked meatloaf also freezes well (if your meat was frozen) - I usually slice it up and wrap the slices in foil - you can either wrap all the slices together or individually, depnding how you're most likely going to want to use it. Then I usually unwrap it, put it on a baking tray, cover with fresh foil and bake for about 40 mins until its really hot.
