Meatless meal ideas???

Here's a link to my Vegetarian Category on my blog. There are lots of good things on there including soups, pastas, make-ahead meals... My family isn't vegetarian, but we eat meatless frequently.
 
This is a recipe I got from my sister. Cook one lb of spaghetti. Drain it, and place it in a mixing bowl with one can of diced tomatoes (any flavor you like). Season with salt/pepper (I add garlic powder and oregano), and mix together. Place one half of spaghetti mix in a casserole dish that's been sprayed with cooking spray. Sprinkle on one half bag of shredded mozzarella cheese, layer second half of spaghetti/tomatoes and the rest of the cheese. Cover with foil, and bake in the oven for 15ish minutes at 350. Then take off the foil, and bake until cheese is melted.

We serve this with garlic bread. If DH wants meat with it, I cook up some frozen meatballs for him.
 
Ok, we are in the south so take that into thought:

we like dried beans. pinto, field peas, whilte beans etc. I cook in a crock pot and serve with slaw, onion and corn bread.

We like pasta (whole grain is much healthier) with cheese or tomato sauce. Add veggies too!

Eggs are a good protien and low cost. Serve as an omlet (cheese/veggies), or scrambled with potatos, rice or (remember the south thing) grits.

I try to skip meat at least a few times a week.

This sounds good!! What size can of diced tomatoes do you use?
 
Tofu Parmesean is a family favorite. My dd is vegetarian, but we don't eat very much meat and we all love this one.
It is basically the same recipe you would use for chicken parm, just buy extra firm tofu instead. You need to use paper towels to gently squeeze the moisture out of the tofu, and then cut it into smallish pieces (I just use pieces that are an inch thick snd the length of the block)
From that point on proceed as if you were making chicken parm. Coat it with egg and bread crumbs, fry it, and bake it in the sauce and cheese.

The tofu absorbs the flavor of whatever it is cooked with so it's yummy. I get ours for 99cents a block and that is all I need for dinner and leftovers for another meal.
 
I occasionally use that vegetable protein substitute for hamburger and make chili con carne with it.

Today I made a big crockpot full of tomato sauce. I used canned and fresh tomatoes, onions, garlic, peppers, mushrooms and carrots. Yummy!

I served it over Barilla Plus spaghetti tonight. Later in the week, I'll use the rest of the sauce for homemade pizza and minestrone soup. For that I'll add veggie broth and some great northern beans. Serve it with fresh grated Parmesan. All meatless meals, but very healthy.

Baked potatoes and tossed salad

Black beans, tomatoes, and taco flavoring (cooked together) served over white rice.

A nice, hearty vegetable or broccoli and cheese soup.

Saute sundried tomatoes and minced garlic (or we do whole cloves - we love garlic) in olive oil, serve over angel hair pasta (you can also make this with diced chicken breast - yummy!).

Another favorite: grilled cheese and tomato sandwiches served with salad or tomato soup.
 
I just made this today.
1/2 package wide noodles (I used whole grain)
3 cups mashed potatoes
1 to 2 large onions, chopped
1 stick of butter or margarine
1/2 pound American Cheese

Cook noodles according to package. Melt butter in pan and saute onions. Grease or spray with cooking spray 2 loaf pans. Put a thin layer of the sauteed onions with butter into the bottom of both pans, then a layer of noodles, a layer of potatoes, then cheese. Repeat. End up with cheese on top. Put in a 350 degree oven until the cheese melts (about 20 minutes).
 
I make stuffed shells. After you make them put them on a cookie sheet and put in the freezer to freeze them. Once frozen I put them into a ziploc bag and then only take out what I need. A box of shells makes 36-40 stuffed shells.

Bean & Cheese Nachos or Burritos

Pasta w/Black beans, tomatoes, green/red peppers, olives, garlic and red pepper flakes (a recipe from one of the Southern Living cookbooks, doctored a bit - I LOVE beans and pasta together!)

Spinach and cheese omelets, or eggs any other way you can think of

Cheese or veggie pizza (we buy pre-made crust and make it at home)

Veggie Lasagna (made like traditional lasagna, but add veggies like spinach and/or zuccini instead of meat)

Vegetable Soup & Grilled Cheese sandwiches

Broccoli & Cheese soup w/a good french bread

We also use a lot of tofu for our daughter, but not because she's a vegetarian- she LOOVES it! This recipe sounds really yummy! I've also heard wonderful things about using it in stir fry!

Rice & beans is yummy & quick - we add chopped spinach to ours as well.

If you like Indian food (or want to try it - LOTS of great vegetarian dishes in Indian cuisine), this is one of our favorites:

Slow Cooker Vegetable Vindaloo

You don't even have to use all of those ingredients & it's still good. We often leave out the leeks & cilantro; I do recommend subbing potatoes for 1/2 the cauliflower, it makes for a heartier dish.

my youngest son does not really like meat, so I have been doing a lot more meatless lately too.
current favorites: meatless chili, cheese and/or bean enchiladas or burritos, veggies fajitas (we love mexican food, obviously ;)) now that it is getting cooler I am doing a lot of soups - potato leek, tomato, and broccoli are the most popular here
I make a really awesome fake chicken soup with Quorn chicken, but are you looking to cut meat for health or ethical reasons, or is it a money thing? I love the quorn products, but they are not cheap.
TVP is a lot cheaper and makes a good mock meat, or I have a friend that makes a fake "ground meat" by freezing tofu and then thawing it, and once it thaws she crumbles it. I have never tried it but she said it is fast, easy and cheap.
 
I just made these this weekend, so they are on my mind:

Corn & Black Bean Quesadillas
1 can corn w/red peppers, drained
1 can black beans, rinsed and drained
1 small can green chilis, drained
Flour tortillas
Shredded pepperjack or monteray jack cheese
Sour cream
Salsa and/or Ortega taco sauce

Mix the corn, beans and chilis together; place desired amount on a tortilla. Top with cheese and another tortilla. Bake on cookie sheets (350 degrees for 10-15 minutes). Serve with sour cream and salsa/taco sauce.
