Meat Loaf recipes??

Hi. Sorry, I had forgotten someone wanted the Amish meatloaf recipe.

2 1/2 lbs. meat
2 1/2 cups breadcrumbs
1 cup cubed small cheddar cheese
salt and pepper
1/2 green pepper, chopped
small onion, chopped
2 eggs
1 cup ketchup, also when done put some on top

Mix all together. Bake at 350 for 1.5 hours, uncovered in casserole/brownie pan (coated)

We love it, b/c it doesn't leave an aftertaste like a lot of the meatloafs I used to make. Really has no spices to speak of, but is soooo good!

No real recipe - but here's how we do it here...

1 1/2 - 2 lbs ground meat (usually the lean stuff from Costco)
2 or 3 eggs
about 1/2 cup chopped onion
about 1/2 cup chopped green pepper (but watch out .. not too much because it can really over power the flavor.
about 1/2 cup shredded carrots
a big squirt of ketchup
a little squirt of mustard
salt and pepper
Take off any rings from your fingers and squish it all around..
Take white or wheat sandwich bread - about 4 -5 slices... get it wet - squeeze out the water and tear it up in into the meat. Squish that all into the meat mixture.

I used a small "broiler" pan so the fat will drain into the bottom - form a loaf and bake at about 350 - 375 until it looks done... usually about an hour I think...

I LOVE the taste of the carrots/onions/green pepper all mixed together!

I make mine about an inch and a half loaf ---

put ketchup on the top and bake

I bake at 300 for about 1 1/2 to 2 hours ---

I make mine very similar; we call it an Italian version of Meat Loaf. The only things I do different are:

I add half the Italian bread crumbs and subsitute it will actual bread crumbs. I think it makes a big difference.

I used minced onions instead of fresh cut onions and add a little onion powder.

I add some Italian seasoning as well.

I add two eggs and 1/4 cup of water.

I also add honey barbeque sauce instead of ketchup or tomato sauce. I add it into the mixture and also drizzle it on top with some kosher salt.

I make mine similar to my meat balls. I don't have exact directions since I don't measure it out.

- I use a combo of ground turkey and ground beef
- 2 eggs
- tomato paste (usually 2 cans)
- shredded mozzarella & asiago cheese
- italian bread crumbs.
- minced garlic
- oregano
- parmesan & romano cheese

mix it up, put in a loaf pan. Coat with some tomato sauce and parm cheese.
bake 350 for 90min
 

I have no idea as to my measurements I just dump stuff in. Dh begs for my meatloaf though and I always make an extra that he takes to work to share. Shipyard workers will eat anything I think but they LOVE my cooking.

1# or 1 1/2# hamburger
6oz or so of ground sausage
a big squirt of ketchup
1 egg
salt pepper garlic sage
worcestershire sauce
chopped celery
chopped onion
grated carrot
grated cheese (dh likes LOTS of cheese but it's a matter of taste)
some heinz 57 and/or A1 steak sauce

smoosh it all together with a tube of crackers. If you have a salad shooter, whip those crackers through the grater attachment. Works great and they are much finer.

bake 350 for around 45 min. Mix ketchup, brown sugar and a bit of worcestershire sauce together and the last 10 min or so top with that and bake it.

Don't bake your meatloaf on too high a temp, the bottom will burn before the rest is done. And be sure to let it stand for 5 to 10 min before slicing so it doesn't fall apart.
