Meal Vouchers Casual & Premium

This is my family's second trip to Disney - Going in November.
Can anyone give me info on Meal Vouchers? I've seen both Casual Dining and Premium. I can't tell if these are really a bargain or exactly how they work. There are 8 of us going - 4 in my family and 4 in my sister's. We are staying at Port Orleans.
