If we are doing the free dining plan, do we get credits for the first day we check in? Even if we are checking in late in the day? Example, if we check in at 7 on Saturday do we get a snack, CS and TS credit for the day? Thanks in advance for the help.

You get 1TS, 1CS, and 1 Snack for each night of your stay. You can use these how you want, so you could use them on that Saturday if you choose.
 
yes, you receive credits based on how many NIGHTS you stay, not how many days. You get access to all your credits for the entire trip as soon as you check in, and it's up to you to decide when and how to use them, as long as they're all used before midnight of your check-out day. That is when any unused credits will expire.
 
If you notice the previous posters said the number of credits you get is determined by the number of nights stayed, not days. We usually take the first flight out of DFW in order to make sure that we get to WDW by lunch and then take the last flight out of MCO in order to get the most time in the parks. We have always been able to use our dining credits as soon as we arrive and also they are good on the last night up until midnight. What this means for us is that we always have to pay out of pocket for a few meals,since we are always at least 2 credits/person short. For people who arrive at WDW late or leave early on their last day, they would not have this problem. My point is that if you are there seven nights/eight days, you only get 7 TS, 7 CS, and 7 snack credits, not 8 of each, so be sure to count your meals and if you are going to run short, figure which meals are cheapest and pay for those OOP, (either that or you could share some meals:upsidedow).
