I rented DVC points for our upcoming vacation in June. I know I have to go through the person that I rented from to add ME. Here is my question:
We want to add a night at POP or somewhere on site, not DVC, to the end of our stay. Can the person I rented the points through still add our return trip on ME to the airport even if we are leaving from POP and not a DVC resort?

I think so, but you should just add it when you make the pop reservation. It seems like it would just be easier that way.

After you get there you can make the homebound DME reservation (or any desired changes) yourself. You will need to do it no later than morning of the day before you need to use DME, here, the day before final checkout.

ME can be booked one way too. Just book your return ME with the Pop reservation, and have the DVC owner just book it one way for your arrival. If you have a roundtrip booked by the DVC owner, you can always take care of canceling the return portion yourself. ME is tied to the reservation it's booked for, it won't be one ME reservation straddling both room reservations, but two one way ME confirmations that you'll have.
