I think this can be done, but wanted to ask the experts.

Arrive at MCO and use ME to stay one night at Disney Resort.

Check out and spend 3 nights at Universal (using a rental car)

Check back into a Disney resort for the last night (via car rental) and use ME to get back to the airport.

Beginning and end of trip using ME for airport transportation and staying onsite, middle of trip leaving Disney property for a few days.

Absolutely not a problem!!

You will need to make a DME reservation for each Disney reservation. You may also receive yellow tags for both reservations, but will only need them for the trip TO your Disney resort. Just discard the 2nd set.

You can - but have you compared the cost of a rental car from Disney to Disney for four nights vs. from the airport to the airport for five nights, i.e. just keep the car the whole time? Usually, a car rental 'week' is five to seven twenty-four-hour periods, and you can find deals.
