I made my arrangements thru MS since I am DVC staying at BCV. Two separate parties arriving 2 days apart, all leaving together. Both times the MS rep seemed confused as to how to do this. When my info arrived I received 3 booklets:
1: Arriving info for me and DD1 leaving on the 13th (correct) but no departing info.
2: Arriving info for DH and DD2 leaving on 15th (correct) and myself and DD1 also departing on the 15th (incorrect) and no departing info.
3: Departing info for all of us, but the flight departure info is for the 7/21 (correct) but the voucher has 7/20 listed (incorrect).

Aside that I have to get the departing date corrected, is it ok that there is no departing info included on the arriving vouchers? Does ME need that when we check in at MCO? If so I have a problem cuz we are flying on different days.

You have ZERO to worry about. Everything is just fine. Leave it as it is ... for now.

When you land at MCO and then go to the Disney Welcome Center (the DME counter), the cast member will ask to confirm your return flight information. AT THAT TIME, you can set the record straight and give them all the correct information. This is the VERY BEST time to do it, since it'll be the only time during your entire trip that you'll be face-to-face with DME cast members, who are the ONLY people who truly understand how DME works.

I absolutely agree with Eric on this one. The reservations and Member Services CMs have no clue how to enter different arrival and departure dates/times.

The easiest way to get everything correct is just reserve DME without your flight information. You get your boarding passes and luggage tags that way.

THEN when the folks arrive at the airport, confirm with DME cast member that KNOWS how to input things correctly in the system for everyone's departure dates and times.
