My DD will be 12 and has way outgrown the "kids meals" of chicken nuggets, etc.. She loves steak, shrimp,
ribs, etc.. All the pics I've seen of the MDR entrees have sauces on them which DD does NOT like! Is it possible to order a dish and say leave off the sauce for example? Or, put it on the side?

We were just on the Magic the first week of December. My son preferred to have have a steak with no sauce (but ketchup on the side) most nights. He tried some of the kid's menu the first night and was not happy with it. Our servers were very happy to help us find something that worked for him. We had wonderful service!

For the most part. Have it your way. Offer some of yours even so they can see if they like the tastes. Time to venture out, a cruise really allows for this. Even younger kids can order from the adult menu.

The lighter fare menu items would also be a good choice as they don't have the sauces that the main entree items have. The teens at our table ordered the steak, salmon, or chicken from the lighter fare menu each night.

And if they latch onto an item they like one night, ask the servers if such can be delivered subsequent nights. I've had the same (two) soups all but 2 nights as appetizers our last 7-day sailing (and no I am not that old or set in my ways but know what I like).

Feel free to discuss what can and can't be left off a meal -- I too am not a big sauce fan and often request it to be left off. (I find the cuts of steaks on the main menu are much better than the lighter fare steak so I often order the main menu steak and leave off the sauce and they are always very good without it. The ribs on the Pirate menu are usually good but often are bathed in BBQ sauce. I have them leave it off -- there is still some sauce on the rib itself -- but not the extra.) I only point those out because you said your DD likes steak and ribs. (Shrimp is easy to find without sauce -- lots of peel and eat options around the ship.) The pp is right in directing you to consider the lighter fare options as well as there aren't any sauces on them but they aren't seasoned very much either -- maybe that's a good thing for your DD -- but did want to caution you in case she finds them bland.

If it is just a matter of not being sure about the taste -- ask them to put the sauces on the side and then she can try new things.

My DD (who is 7) really likes the salmon and steak off the lighter fare menu (offered every night). She primarily ordered those (alternating with her Mac and Cheese).

But if something looks good on the main menu, they will definitely fix it to your liking. Just ask! They are super accommodating.

The very last night there was a beef wellington on the menu. My DH really thought it sounded good but HATES mushrooms. The problem? It's all prepared as one giant piece and then cut in portions. Well, our waiter took DH's portion and cut off the mushroom and puff pastry so that only the meat remained. Talk about going above and beyond!

We have very picky eaters too... But big eaters. My kids ordered off of the lighter fare menu, even asking for French fries with their steak. It was never a problem. DH and I were so impressed at how important it was to our wait staff that the kids ate and enjoyed their meals.

If there's any characteristics about a particular meal that you want as a theme throughout the trip, let the waiter know on the first night. Furthermore, if there is an allergy, let them know when you get on board (and go to a dining room). So far, Disney has bent over backwards to try to get food the way we like it. E.g., my wife has a food allergy, and they even prepared a special meal (on the ship) that was sent to Castaway Cay for her.

Don't be afraid to mix and match too. I'd often like the meat from one plate, the side from another, the kitchen always put together what combo I preferred...

What is the lighter fare menu?? I haven't heard about that before now- I'm very curious! Thanks!

On some menus there's a separate "Lighter Note Offerings" section:

On other menus, the Lighter Note Offerings are listed with all the other entrees, with a little Chef Mickey head image to designate them:
