May Trip - What to expect?

So we have been numerous times pre-COVID. We're trying to decide if it's worth going this May when the kids get out of school like we've done in the past. Based on the info I've seen it seems more worthwhile to just stay off-site at a house with a pool vs on-site right now.

Is every ride at ever park 60+min waits or are there some you can right with less ride times.

What about dining. If we book 60+ days out are reservations generally available.

Does anyone also know what happens if you arrive and have a fever. Are you able to reschedule your tickets. What if it's half way through your trip after you've already started using your tickets.
