I think an important question would be are you the sort who would be more stressed by anticipating the bill at every meal or about the number of credits you may still have left near the end of your trip, assuming either of those might apply to you.
My wife and I have found that we prefer to have the DP but we are not unwilling to go without it, it's all a matter of the best deal for us. But some of what we like about it is knowing that, for the most part, we can order anything on the menu and not worry about the cost of it. And we don't avoid the cheaper options if that's what we're in the mood for, but if we want to get the steak or seafood we aren't shy about it either. She and I are sort of kind of a little bit foodies, though, so it is not unheard of for us to get an appetizer at dinner even on the regular DP when those aren't covered, and we usually have a cocktail or a glass of wine with dinner too, and this being the first year that alcohol is included, that means that the value for us just went up. And while we don't often indulge at home, whenever we vacation there is room for dessert. In fact, our upcoming trip we are planning to upgrade to DxDDP because then the appetizers are covered and we won't be as shy about some of the signature options, either. We have never avoided signatures, but when we were on the regular plan we were always a bit more cautious so that we could make our credits stretch. Some people might argue that by choosing more signatures for our upcoming trip that we would be losing value, but that's not how we see it. We are of the opinion that value is both an objective and subjective thing. Obviously our situation is different as there are just two of us and neither of us is an especially picky eater or has any allergies, but especially looking at the cost of the Dx plan, we can easily get the cost of one person's plan for the day out of a single dinner at Raglan Road (a favorite of ours), so that means that as long as we can make up the cost of the other person's plan for that day at breakfast and lunch we come out ahead financially. Easily done with the cost of meals, even QS. So there's the objective part. But the subjective part is, again, knowing that we don't have to stop and think about what we're ordering or talk ourselves into something cheaper. We don't talk ourselves into the most expensive items to justify the cost, we don't think about it, we just order what we want then because it's taken care of. That's the subjective value for us, along with having it taken care of in advance aside from the tip.
But beyond the financial aspects of it, as anyone who has been knows, you'll put a lot of miles on your feet on a day at Disney and it's easy to feel, even at a leisurely pace, that you're just go-go-going. We enjoy the chance to stop, sit down for an hour (and change sometimes), have a drink, and just enjoy the meal together. It's a little break and a chance to recharge before we get back into the hustle and bustle of the parks and the rides. We love the whole experience, but that little span of calm is something we look forward to.
