I could use an assist.

In a couple of weeks I am to be marooned at WDW for 5 days and left mostly alone to my own devices. I will be abandoned throughout the days and two of the nights while the normally commando wife gladly spends her days studying at some Disney training that her district is generously affording.

At present I think my daily walkabouts will consist of nothing more than unhurried samplings of what WDW has to offer (no parks during the days but for maybe Epcot). Although I stubbornly plan not to plan, I would enjoy adding some lucidness to my lunacy. What I would like to know is what small treasures are out that I should make a point to enjoy.

1. Are there any special deserts that I should plan around?
2. Is there a coffee klatch somewhere that I should visit?
3. Is there an exceptional beer, wine, soda, etc. I should track down?
4. Is there a day-bar where I should try to grow some roots?
5. Is there a view or object I should take the time to see?
6. Is there some all but now lost tradition to which I should pay homage?
7. Is there an off-the-normally-trodden-path place I could drop in on?
8. Etc.?

I have always been an early riser so I will have plenty of time to just be wherever I am. Any suggestions would be gratefully appreciated.

I've always enjoyed writers stop at HS, but found this last trip it's now a well known secret. DH & I also enjoy sitting looking over the lagoon in the seating area down the steps at the walkway between France & The Uk - it's a quiet area to escape with a pastry and coffee in hand.
 
It depends on what you are into:
sports: golf, mini-golf, fishing, RPDE, marathon, bowling, ESPN Club, WWS/ESPN Zone, etc
shopping: DTD, area outlet malls, large scale malls
drinking: Jellyrolls, Raglan Road, monorail tour of resorts, walking tour of resorts in the Boardwalk area
movies: DTD 24 screen theater some with meals served by waiters
night clubbing: Jellyrolls, Atlantic Dance, Raglan Road, Citywalk
resort tours: monorail tour of resorts, Boardwalk around the lake tour of resorts, AKL/AKV
offsite: Gaylord Palms Resort, Citywalk, swamp tour
 
I have spent many days at Disney by myself while others are off on their own. I spend every morning relaxing in the pool. Then off to lunch to try different things. I love the school bread in Norway. The creme' brulee in France is nice and they have lots of desserts to try. I enjoy downtown Disney just to walk around and Wolfgang Pucks has good pizza. I would choose my favorite rides to go on, Soarin' and Haunted Mansion. Everyone talks about the Dole Whips but I prefer the Citrus Swirls at Magic Kingdom. I love to spend time at Animal Kingdom Lodge, it's just so peaceful there, instant relaxation. Beautiful Lobby! What's really nice about planning for yourself...is that you can do what you want, whenever you want, at your own leisurely pace; it makes all the difference. Enjoy your serenity, even in a place as busy as Disney! ::yes::
 

Here are some more things you could do:

Canoeing and/or fishing at Fort Wilderness
Leisurely explore the trails at Animal Kingdom
Behind the Seeds tour at Epcot is inexpensive
Spend lots of time exploring the countries at Epcot
 
TouringPlans(dot)com sells an e-book listing all the bars and lounges in WDW with drink menus and pictures. Using it in conjunction with visiting non-park areas of WDW may interest you.
 
Beaches and Cream Soda Shop at Beach Club Villas DVC Resort.

Probably too much for one person but we get a Kitchen Sink Ice Cream dessert there every vacation. Yummy.
