Epcot-lightning lane question

Hello,
We can purchase our lightening lane passes tomorrow. There are 8 of us in the group. We will be arriving in 2 cars, which means we will be parking by the main gate of Epcot. (Other transportation is.not an option, as grandkids will not be in transportation without car seats.). Trying to determine our Tier 1 option.

We have dinner reservations ear where Remy’s Ratatouille Adventure is.

When signing up for our first three experiences, are we better off signing up for Remy’s for later in the day (as geographically, it is close to our dinner location)? Or should we secure a Test Track time initially, (and geographically closer to main entrance) and then set up Remy’s after we have done our first experience and then can add something?)

I’m curious to what you experts think!
 
I would go with your second idea. If you book something like Nemo or Figment close to park open, you can burn that LL and book Ratatouille for later in the evening.

I did something similar the other week. We had our LLs for Magic Kingdom lined up. We tapped into Haunted Mansion first thing and then I booked Ratatouille for night time when we would hop over to Epcot. Worked out perfectly.

And last point, if you don't book Test Track first thing, it will most likely run out of times and you will not get a LL for it.
