I discovered this board over a month ago and a bit after that decided to jump in and start Atkins. After reading lots of posts my level of commitment climbed. I was and still am excited about this new life change.
I didnt know these journels were here! This is a new discovery for me and I plan to read a bit today about each of you! I am so excited to have this crutch and look forward to posting here often so I can actually keep track of my days.
I started Atkins about 4 weeks ago. My starting weight was 159lbs. I am now at 150lbs as of this morning. Probably less since its that TOM but I wont get back on the scale till next week and will check then.
My body seems to naturally hover at 135lbs but after turning 40 and after having back problems it started climbing! It was time I did something about it! I am in hopes that before long I can get back to 135 plus maybe 5 more. That would make me happy.
I have always been involved with physical activity and until recently worked in a gym as a personal trainer for nautilus. It is almost a year since I have been able to work out. I miss it greatly.Slowly I am trying to get back to it and hope I am back full swing soon. I have been advised that I need back surgery but I have not come to the mind set to agree. It would be a major operation and I am scared beyond belief. I keep hoping that I can bring my weight down and excersise again to lessen my pain. So once again another bout of PT is to begin after I return from my trip.
I planned to do Induction for 2 weeks and after the 2 weeks I decided to stay on Induction until my vacation. Once I return I think I will do induction for one more week. It hasnt been very difficult for me to stay on. The beginning days were awful and I thought I wouldnt survive it. Getting sugar and carbs out of my system made me feel sick, tired, cranky and I had a killer headache. Once the process completed I was a new person, full of energy and feeling great.
I am not going to list what I have eaten to get to this point I will just start from today.
One thing I did not do was eliminate all caffiene. I am a coffee lover. I did cut down to about 1-2 cups a day and I do not drink soda at all. Most of my fluid intake is water and I am doing pretty well with that.
This morning I made 3 eggs over easy in butter and had one slice of ham with it. One cup of coffee with a bit of skim milk.
For lunch I made turkey salad. I had a recipe and it is wonderful! I will make this again for sure. I had it over some spinach greens.

celery
walnuts
mayo
sour cream
heavy cream
dijon mustard
splenda
S&P
fresh parsley
For dinner I am making meatballs using ground pork, beef, and veal. Chopped garlic, low carb tomato sauce, grated cheese, one egg and instead of bread crumbs I crumble up some pork rinds (works great). I broil them and then cover them in sauce (about 1/2 cup) and shred fresh mozzerealla over the top and brown it all under the brolier. Very yummy and it helps with my missing pasta.
I love to cook and this plan has allowed me to be creative.
I am sure there will be some snacking in there somewhere and will add that later!
