Making lentil soup

Never made it, never had it. We are trying to eat better. It smells good, but I'm nervous. :rolleyes1
 
The biggest problem I have with lentil soup is sometimes we don't make it thick enough: Lentil soup, for some reason, tastes worse to me than other soups when it is "too thin".

It's a food thread... so we gotta have a recipe right? This is the lentil soup recipe I want to make next.

Spiced Butternut Squash and Lentil Soup

1 cup dried lentils
2 1/2 cups butternut squash cubes — (3/4-inch)
1/2 cup chopped onion
1/2 cup chopped carrot
1/2 cup chopped celery
2 garlic cloves — minced
1 teaspoon garam masala
4 cups low sodium vegetable broth

1. Rinse and drain lentils. In a 3 1/2 to 4-quart slow cooker place lentils, squash, onion, carrot and celery. Sprinkle garlic and garam masala over vegetables. Pour broth over all.

2. Cover and cook on low heat setting for 8 to 9 hours or on high heat setting for 4 to 4 1/2 hours. [Adjust seasoning.] Ladle into bowls.
 
I've had a bag of lentils in my pantry for months. I want to make soup, too. I don't know why I keep stalling.
 
SUCCESS! It's delicious- and nice and thick! It would be nice with a little sausage in it... but that's what I'm trying to get away from. :rolleyes:
 

I love lentil soup. It freezes really well too. I make mine very similar to yours except I use sweet potatoes instead of squash. I like the extra sweetness. I'm glad you had success!
 
One of my favorite soups. Add psanish chorizo peices and id to die for!!!
 
One of my favorite ways to prepare lentils:

you can cook them and season them to taste like taco meat! Really, once you put them in the tacos you can't tell they are vegetarian and not made with hamburger. I lost the recipe my friend gave me, but you can google around and find some similar ones. GL
 
Love lentil soup. Just discovered it a few years ago.
 
I love lentil soup. I know you are trying to eat healthy, and I eat pretty healthy myself. However, when I make my lentil soup I start with pepperoni cut into small pieces...maybe 1/2 cup, so not too much. I cook that in the pan first to brown it up and then add veggies into it (celery and carrots cut up into very small pieces) until they are just tender, then I add onions and let them sweat a bit. After that I add chicken broth and let everything cook down pretty well. Last, I add the lentils and let them cook until nice and tender. The pepperoni gives the soup just a little bit of spice and a great flavor. You could probably use turkey pepperoni too for less fat. I don't like traditional sausage, that's why I tried the pepperoni the first time, and now it is the only way I will cook the soup.

I make a lentil soup that is actually half lentil and half split green pea. To me it tastes like "all lentil" but the split peas thicken it up a bit and add texture.

Just use half a cup of each, add about 4 to 6 cups of chicken broth or vegetable broth, carrots, celery, onion, bay leaf, and some seasoning - I have tried either cumin or herbs de provence. Both taste great.

Bring all to boil and simmer for at least an hour - until soup is the right consistency for you.
