I was checking to see if maybe soaking the chicken in fajita mix would be a good idea for more flavour? Would I do it before or after it's cooked? How do you cook the meat (I've always fried it or boiled it).

I marinate mine in lime juice, garlic, onions, olive oil, salt and pepper for several hours, then cook it on the grill.

Marinate it for awhile first. If I'm in a rush, I just use one of the spice mixes that are sold in little envelopes at the grocery store.

Enjoy! Chicken fajitas are one of our favorites.

I also marinade mine. Lime juice, garlic, & chili oil for mine. You can use whatever flavors you like but I say definitely marinade them....it really improves the flavor.

Marinate the meat the grill or saute or skillet fry the meat.

I also marinate before cooking -- lime juice, garlic, diced jalepenos and olive oil.

Mmmmmm....fajitas!

I have to admit I've only made fajitas using the packaged spice mix and follow the instructions on the package. I've always felt the flavor comes out great - although I've only done chicken so beef or pork might be different. Of course, usually this is one of those "quick to fix" meals I put together at the last minute since I almost always have frozen chicken breast, fajita mix and tortillas on hand. I also try to have red onions and sliced black olives which are nice as add-ins for the meat. A little sour cream is nice if we have it but don't really need it to enjoy the meal.

I'll definitely be trying a marinade version soon after reading this thread and seeing how simple it is.
