Making a Perdue Oven Stuffer on Friday, what to do with the left over chicken?

Decide to take out an oven stuffer I have in the freezer to cook this coming Friday. Looks like cold weather is coming in with wind, snow and mix. My plans are to just stay in, so what can I make good with the left over chicken?

I am planning on using what I have in the pantry and I have a very well large stocked pantry! :woohoo:
 
I make home made chicken soup. I pull most of the meat off the bones and then throw the whole carcass in a pot with about 6 cups of water, an onion, carrot, celery, and some salt, pepper, and herbs like sage, thyme, rosemary, etc. Boil for about 2 hours and then drain the stock. (At this point I sometimes add more water...adjust your salt if you need to.) In the stock, I boil carrots and frozen egg noodles and the leftover chicken meat. In the last couple of minutes I throw in some frozen peas. The soup is delicious.

I usually make a broccoli/cheese casserole out of the leftovers.

Put chunks of chicken in the bottom of a casserole dish - cover with cheese sauce (I usually make it with a can of cr of mush soup, milk, shredded cheddar and spices) add a package of thawed broccoli florets, then put moistened stove top stuffing mix on the top. Bake it for about 35 minutes or until it is all bubbly.

Dh says it tastes better reheated for lunch the next day.
 
We pull off the white meat for chicken sandwiches, the rest goes inthe pot for chicken noodle soup. Nothing better on a snowy cold day.

Get a saw (the kind carpenters use is okay) and cut the chicken in half down the middle. Put one half back in the freezer, still fresh frozen and unthawed.

Now you won't have leftovers to worry about how to use and the second half will come out just as juicy and tasty later as the first half does now.

Shepards pie - but with chicken (very good).

At times I can almost get an entire weeks worth of meals out of left over chicken.
 
Our favorite leftover chicken recipe is one we altered from Eatingwell.com ...

Chicken Tostadas

Slice half an onion and throw it in a saucepan with a can of rotel (or diced tomatoes w/ green chilis). Simmer it down until there is almost no liquid left and then add two cups of shredded chicken. Cook until the chicken is warmed through.

Heat some tostada shells in the oven according to the package directions.

Warm some refried (we use black) beans.

Spread a tostada shell with beans, then add the chicken mixture and top with lettuce, tomato, cheese, salsa... whatever you like.

I tend to really pile on the veggies and eat it with a fork like a salad. YUM! We're having that tomorrow night.
 
Did a really easy chicken dish the other night when it was really cold. I used white meat chicken but any kind would work.

Mix chicken, bag of stuffing mix, can of the healthy style cream of chicken soup and a can of fat free chicken broth. Bake 400-30-45min. Hot and easy and low fat and delish!
 
Our families favorite things to do with leftover chicken is to either make a chicken pot pie, or chicken salad for sandwiches. They also enjoy adding the cooked chicken to salads!:)
 
Turkey (or Chicken) enchiladas
2C cooked chicken or turkey
8.75 oz. can no salt added corn - drained
8oz. container reduced fat sour cream
1 1/2 C lo fat shredded mexican cheese
2 teaspoon chopped fresh cilantro
10 6inch corn tortillas (if you use flour ones they are just mushier)
1C Salsa
10oz can enchilad sauce (we've used both, green is better)

Heat oven 400 Coat 9x13 pan w/ cooking spray
In lg. bowl combine turkey, corn, s.cream, half of cheese and half of cilantro
wrap 5 tortillas in damp paper towel. micro on high 30 sec. to soften. repeat w/ next 5 tortillas
Place about 1/3 c mixture each tortilla and roll tightly
Arrange in baking dish seam side down.
In bowl combine salsa and enchilada sauce. Pour over tortillas. Top w/ remaining cheese.
Bake 15-20 min. or until cheese melts and heated through.
Sprinke w/ remaining cilantro.

This is super easy. I omit the red pepper, since I just don't like them!

Chicken and Salsa Soup

2 quarts water
3 tablespoons chicken base (we usually sub 3 boullion cubes of chicken boullion)
1 lb cooked and diced chicken
1 heaping tablespoon chili powder
2 - 11 oz cans of whole kernel corn
1/2 red pepper,diced
2 cups chunky garden style salsa (24 oz size)

In a large sauce sauce pan, add all ingredients. Simmer for 6-8 minutes or until peppers are cooked.

Top each bowl with your choice of crushed tortilla chips, grated monterey jack cheese and/or sour cream.

Just a note: as far as what type of salsa to use, use the same "heat" as you would for salsa and chips. We like mild salsa, so we use a mild salsa in this soup. And, I do not like peppers in stuff, so I don't put them in anything.
 
We do this with turkey too. I use the leftover gravy instead of a can of soup.

Bisquick Chicken Pie

2 cups frozen veggies, thawed
1 cup cooked chicken, or 1 can chicken
1 can cream of chicken soup
1 cup Bisquick
1/2 cup milk
1 egg, beaten
Preheat oven to 400 degrees. Mix veggies, chicken and soup in a glass pie plate. In a separate bowl, mix the Bisquick, milk and egg. Pour batter on veggie mixture. Bake for 30 minutes.
 
How long before leftover chicken should be tossed? We oven cooked a whole chicken on Saturday and wasn't sure how long I could use the leftovers. I've made two dinners with the leftovers already.

I normally freeze any leftovers that I have at the end of the 3rd day. We can only handle eating the same stuff so many times. :rotfl:

I vote chicken and dumplings. Pick the carcass and boil it with onion and carrot. Strain and throw chicken bits back into the stock. Add a finely diced onion, peas and carrots. To make the dumplings, get white lily self rising flour. Add hot water until it makes a wet sticky dough. Let it get puffy and put big spoonfuls down into the boiling veggie broth. That will give you a dumping that has a biscuit center, its soooo good.
