Needhams (Maine Potato Candy)

* 2/3 cup mashed potatoes (with no butter or salt)
* 2 pounds confectioners sugar
* 1 large package coconut

mix all and spread onto jelly roll pan. chill. cut into cubes about 2" square

melt 1 large package semi sweet or dark chocolate chips with 1/3 bar baker's wax (paraffin).

dip cubes into chocolate and set out on wax paper. chill.

tastes pretty good too.......the lou rod company is in our town.....and they make these soooooo delicious......I buy a box every once in a while....cause I can sit and eat them all.........shame on me.....
 

Pumba, thank you for posting this recipe. My grandmother (who passed away 25 years ago) made these all the time. I could never find the recipe. And her three daughters (my DM included) never took an interest. Yet, I knew as a child, that it was simple. Thank you...I will make sure my children learn this recipe to pass to their children.

She also made a candy, again, from potato, that she would roll out flat like a pie crust, then she would spread peanutbutter (?), then roll the crust and cut into wheels. Do you have any clue to what I am talking about? Thanks again......Lee
 
Around here they are made with peanut butter. Does anyone have the peanut butter recipe?
