We did this in 2005 when it was a little different (there was no Deluxe
DDP, so Premium was the only way to get 3 meals/day & it included tips), plus ticket was still an Ultimate Hopper Pass which included everything. Now, with being able to choose the days you want for tickets & if you want the water park it might be a better deal.
It really was way too much for us and I kept track of all the reciepts, etc... IF we had done everything exactly the same and paid out of pocket, it would have cost us $500 less than going with the package.
We went parasailing & booked a private boat which normally is $500 -- hey it was included sure we will do it. My DD & myself were the only 2 who went as she was too light to do it otherwise so we had to go tandem. My older son chickened out but he just went in the boat with us.

Everyone but the youngest & myself went Fishing
DD & DH went horseback riding
Myself and the older 2 took the Mickey's Magical Milestone tour
Myself and the 3 older ones took the Family Magic Tour
We ate at Cinderella's Breakfast, EPCOT Princess breakfast, Donald's Breakfast, Crystal Palace, Rainforest Cafe in Animal Kingdom, Fulton's, Chef Mickey's (several times), Tony's, Liberty Tree Tavern, Sci-Fi Dine-in, Yachtsman Steakhouse and several counter services.
DH wanted to take a speed boat out but didn't realize they were included. If he had done that, probably would have been closer to the cost.
My DD has still said she doesn't want to eat nearly as much as we did last time, seemed we were always running to another sit-down meal. We had our little guy who was under 3 at the time but I used my credits for him for the sit-downs so we never paid out of pocket.
It's one of those plans -- figure out what you plan on doing if you were actually paying out of pocket and then see if it makes sense. You really MUST do tons of activities to make it worthwhile and
it also depends on ages, etc....
