What is the difference between the old ones and 2.0 version? I see you can still buy the old ones - how long are they going to be good for? (Will they be okay for next summer, 2018)?

If you stay off-site and order MBs, how do you link them to your tickets that are in your MDE?

No difference at all in operation.
Both will continue to work (interchangeably) into the foreseeable future.

(The difference is in their physical construction, but they are electronically identical.)

You link the MB to your MDE account.

It's still too far away for my liking, but I'm just so relieved they worked out the Canadian ticket issue and they won't be expiring. We're buying this week for our June '18 trip. But I know every now and then the MBs will go on sale (or certain ones will), so will keep my eye on pricing etc... I think the kids would like the older style ones better, so wanted to make sure they'd be okay, or wouldn't be discontinued for sales.

The main differences between magic band 1.0 and 2.0 is...
-the look
-the fact that you can remove the puck and put it in a lanyard or keychain
-the reader is probably stronger making it easier to scan.

You can use either type of magic band.
Yes there should be no reason why you can't use a magic band 1.0 in summer 2018.

There is a code that comes with your magic band that you will enter in your MDE account to link it.

One thing to note is that the battery in a Magic Band will eventually die, making the long-range capabilities no longer functional (mostly for ride photos and the storymaker interactive elements). They will continue to work for park entry and FPs and anything you have to tap the band on a touch point for. The batteries do last a few years though.

We are staying off site and planning on 3 park days. Does it make sense to purchase the magic bands for our family of 5? Is the convenience worth the cost for the length of our visit and size of our family?

You don't need to get magic bands but they are nice. If you're planning on going back to Disney within the next few years, then I would go ahead and get a magic band when you're at the park. They start out at $12.95 for basic colors (these are the free bands if staying on site). Or you could pay a little more and get a design, a limited edition band, or make your own band at MK or DS.

The convenience of just scanning your band is a lot nicer vs pulling out cards or tickets every time
