Lunchmeat alternatives?

Both my kids love a slice of pizza in their lunch! Leftovers from the day before. It is SO easy to pop in a bag and have that part finished!

Or I make a fast cheese quesadilla in the toaster at the same time I am fixing their breakfast.
 
My DD loves to take:

Top Ramen
Campbell's Chicken noodle soup
Mac and Cheese
Hot Dog
Salad w/ grilled chicken
Apple with peanut butter
BLT's
Chicken Salad
Teriaki Chicken w/ rice
Roasted chicken drum stick.

I try to roast 2 chickens on Monday. 1 we eat for Mondays dinner the other we use for a week of lunches: chicken quesadillas, chicken salad, roasted drumsticks etc.
 
Roll up left over pancakes after spreading with PB and Jelly. Soft tortilla shells same trick they love it. Use a tooth pick to keep it rolled up.
 

What about "pocket" sandwiches? I buy the grands biscuits on sale, then stuff them with leftover taco meat or BBQ, sloppy joe meat, or a little pizza sauce and cheese (add whatever your kids like, pepperoni, veggies, etc). Then fold them over, seal the edges with a fork and bake at 350 until they are lightly browned. My kids don't seem to mind eating them at room temperature, so I usually heat them and put them in their lunchboxes in the mornings and they are fine by lunchtime! (my 1st grade daughter eats at 10:15am!)

I never thought to do that! I usually have Grands biscuits in the fridge. I might do this for leftover dinners some night!!!

My DS11 and all his friends just love boiled eggs with a bit of salt & pepper. Whenever he has friends over I just boil up a dozen eggs and they are gone in minutes. For lunch I would think 3 eggs would be enough, but I would peel them first since the peeling can get messy. Also they will keep a few days in bowl of water in the refrigerator so they don't dry out and stick to the shell on the inside.

Another chicken breast idea is to boil one up then slice it and roll it in a bit of taco seasoning with a side of some corn chips. Purdue makes a southwestern premade package the kids love but I found I can make a similar mix with the taco seasoning. This even makes a yummy dinner for the family if I put out a salad, sour cream and salsa.

Then there is quiche. You could make meats go a whole lot further baked into a pie with the extra egg for protein and cheese for calcium.

This is a great idea. I don't have kids, but my husband and I would both eat these for lunch. I'm going to have to pick up some Grands Biscuits the next time I am ate the grocery store.
 
Depending on the grocery stores available in your area, you may find some that sell lunch meat "ends" very cheap. As others have mentioned, slicing turkey and chicken is easy enough, and runs about $2 per pound or less.

Personally, my favorite is roast beef. Buy yourself a round roast (top or bottom, if you price shop I bet you can get $2/lb or less) and slow roast it in the oven. Usually tastes even better than deli roast beef, and you can season it to your liking.
 
I do hummus with cucumbers on rolls

peanut butter with cheese (I also put pickles on this which is probably icky to everyone else but hey I like it) on bread

cheese and pickle on bread

cream cheese on toast

pita pockets with salad (lettuce, shaved carrots, shredded cheese, cucumbers and salad dressing)

tortilla rollups with pb&j or cheese or scrambled eggs or cream cheese

I also take left over hamburgers/veggie burgers or roast or any dinner meat on rolls or tortillas.
