I just found out that I will be hosting a lunch/late afternoon work meeting in my home at the end of the month. The other attendees will be bringing items, but I was wondering if anyone had ideas for budget-friendly things to serve. I was thinking more of appetizers and the like. Any thoughts?
 
Quiches-you can do broccoli and cheese, spinach and cheese, ham and cheese, bacon and cheese...

Salad-Caesar salad with cooked chicken or shrimp (you can get Perdue done its for already cooked and sliced chicken)

Tortilla/Flatbread rollups-you can make them yourself or purchase frozen (or if you live near a Costco they have fresh ones that you could slice smaller)

Stuffed breads-pizza dough with fillings. Sausage and cheese is my favorite, but I've done Broccoli and Cheese, Meatball, Chicken or Eggplant Parmesan (used frozen chicken patties or frozen breaded eggplant) with sauce and mozzarella, roll up and bake for about 30 minutes, then cut into 1" slices

More appetizer type foods-pigs in a blanket, mini meatballs (in a grape or currant jelly and chili sauce), pizza bagels, kielbasi (cook in apple juice and then coat with some apple jelly, cut into coins).
 
You want things that are easy to pick up and eat - how about mini pizzas? Or just make one big one and cut into strips? (You can use store-bought - whatever is on offer)
 
They had pimento cheese(really good) sandwiches and chicken salad sandwiches. (cut in 1/4's). Everyone was raving about the pimento cheese. Also had a watermelon half filled with fruit. Also instead of cake they had several kinds of homemade cookies.
 

If you have a timer on your oven-put potatoes on to be done when you get there.

Then have cottage cheese, shredded cheese, sour cream, butter, chopped green onions, salsa, sliced black olives, shredded lettuce, chopped tomatoes
