Where would I find the lunch hours for the TS resturants?
I think we will opt out of the DDP this trip-first time ever and would like to do some late lunches rather than dinners to help keep costs down.
Also, DH may not join us until 2 days into trip, and I am sick of the dessert buy no appi optio--discussion for another time yes.
When I do on-line ressies, will it tell me what times are lunch?
Also, if we do late lunches, will we be rushed, and the food quality poor as we will be at the end of the lunch crowd

typical lunch hours are from 11-3PM. No, you won't be rushed. They will clean and set up around you. We have done many late lunches and have never felt rushed.
No, it wont tell you what time lunches are. It will just give you options for the time you selected. If you schedule around 2 you will definitely be safe.
No, the food quality will be no different than if you went earlier or for dinner.

I made alot of ressies online and it looks like lunch ends at 3:55 and dinner begins at 4pm

Yeah most places seem to be 4PM for dinner.
