Low carb muffins

Last night I visited a brand new store, Low Carb Chicago, here in the Chicago area, devoted to the currently popular (and for me, successful) low carb eating. The store opens this weekend. Among the few items I picked up was a low carb blueberry muffin mix, muffins link and I made them this AM. I must say, they are very good, and for low carb eating, 2.5 net per muffin.

Some of the food items, made and/or promoted as 'low carb' that I have tried over the past 6 months while dieting, have been pretty nasty tasting, but these were quite good, very good in fact, IMO.

Just a low carb FYI.

Along with this topic. Has anyone tried the Atkins wraps from Subway. I've have them twice and I thought they were very good.

The actual burrito wrap itself was the best tasting low-carb one I have had. Subway should sell the wraps in grocery stores.
 
Oh yummy, another low carb option for breakfast! I will have to try these muffins, the Atkins ones were, Ok!

Also, I love the Subway's wraps. I eat one for lunch every other day. The ladies at my Subway said you could pretty much add the wrap to any of their sandwiches, but just watch what all you put on them.::MickeyMo
 
I wish I had a store like that here!

I've tried Atknis muffin mixes, and they're really good...the banana nut, and the orange cranberry. www.drugstore.com has them on sale (around $3.99), and free shipping for orders over $25. I also had $4.25 in earned credits there, so I did well. :) When I bake them, I keep several out for the next few days, and then I freeze the rest and foodsave them in groups of 3, so they're always available...no excuses! They're such a great treat.
 

Thanks Dan, I will have to try to get tem. I have always been a big bread and cake guy and this has been the hardest part for me. I have dropped 20 pounds, but ever now and then I don't make it past the Bakery in my store. LOL

I tried some low carb snacks and candy bars, yuck.
 
Oh Dan, you have to make the chocolate chip ones. they are just to die for. We make those all the time. We ran out and had to step down and make the blueberry ones and they're pretty good - but oh those Chocolate chip ones are gooooood.

I see a Chicago DIS Low carb meet coming in the future with a visit to this store. :)
 
Wow, Dan my mouth is watering!

I've in week two of Atkins and have lost 12 pounds already! It's hard to believe that this thing works so well!

I tried the Atkins banana muffin and loved it. Now I have to try these!

I seriously trying to find a good bun mix or already made ones. Michael is on it with me and he wants a real hamburger!

Thanks So much for that link Dan. As you know I'm a big fan of Atkins Muffins but I always put quite a bit of butter on them to make them taste good! I'm going to order some items right now! If you say they're good I beilieve you LOL Thanks for sharing:D

My DH swears by OsoLo buns. He makes double cheeseburgers with them, and uses them for sandwiches too. I can't get past the texture on some of the low carbs stuff, so I don't eat them, but he loves them.

Hello lowcarbing DIS friends! LOL! I have been eating low carb for almost 2 years now... love this way of eating. Another option for a bread substitute is the Good Dr. Atkins original revolution rolls. They are quite good - sliced as a bun for chicken, tuna, or egg salad sandwiches ... or heated with a bit of butter to go with eggs for breakfast. Here is the recipe:

Revolution Rolls
(makes 6 rolls)

Pam spray
3 eggs separated
1/4 teaspoon cream of tartar
3 tablespoons cottage cheese
1 packet of splenda

Preheat oven to 300 degrees.
Separate eggs very carefully (make sure that none of the yolk gets into the whites). Spray Pam on a cookie sheet. Beat egg whites with the cream of tartar until whites are stiff but not dry. In a separate bowl mix the egg yolks, cottage cheese, and the packet of splenda. Fold in the yolk mixture into the beaten egg whites. Be extremely careful not to break down the egg whites. Mix for no more than a minute. Place the mixutre carefully on the cookie sheet, gently putting one large spoonfull on top of another until each "roll" is about 2 inches high. Repeat this until you have 6 "piles". Place the cookie sheet in the oven and bake for about 1 hour. Rolls should resemble delicatessen rolls. Each roll has .5 grams of carbs.

Thanks for the info, I actually live about 15 minutes from that store and my DH works 2 minutes from there. I will have to go and check this out. I have been doing the low carb and liking it.
