I know that alot of us are watching what we are eating and sticking to diets.

I've been trying to think of some new meal ideas for lunch things. I wonder if it would be an idea to share some of the recipes we have. I use some of the recipes from the Wish Board but some contain items that are not easy to get here in the UK.

What do you think?

Great idea!!

i am quite boring with my diet so any ideas would be great, when i get a chance i will post some of the low point dinners i have been having!!
 

Great idea.....

I made butternut squash soup today, (DIET VERSION) the problem with these things is that they are very hard to prepare...but not if you cut it in half and roast in oven for 25 mins!:laughing:

1 onion saute for 3/4 mins,
add roasted butternut squash ( should just squish out with a spoon )
simmer for 10-15 mins
near end add 1/2 tsp of garam masala powder.
whizz up in a blender
enjoy!!! ( if not on a diet have a bread roll..if on a diet omit bread roll! )

Great idea Florence :thumbsup2 I am not very adventurous with my lunch time meals to be honest. I take my own lunch to work 95% of the time, and usually take either a sandwich or a salad, plus fruit and a yoghurt :) So some different ideas would be good :goodvibes

I have one that I love, it's so easy to prepare, it's also good if you're not a meat eater.

1 bag of Quorn mince
1 large baking potato
1 regular can of sliced carrots
3 beef oxo cubes

Put the frozen mince in a large saucepan, make a pint of oxo stock with boiling water and pour it over the mince, turn the heat on and leave the mince simmering. Peel and dice the potato into squares about 1cm square, add to the mince. Open the carrots and drain the liquid, add these to the mince. Leave it to simmer for about 45mins. Serve.

These quantities easily give me three servings and it can be left in the pan overnight for the next day's dinner. You could add loads of other veg to it if you wanted :)

How strange, yesterday I was looking up healthy ideas on the Internet. I didn't find much as they all required loads of ingredients and i'm not just much of a cook. I did find a couple in a weekend magazine though that sounded good so I will post them on here tomorrow.

Butternut squash tastes vert different after roasting, which is another good reason for doing it that way in its skin. If you want to rast chunks to have with your roast instead of potatoes try using a Y-shaped peeler (the Good Grips one is easier on the hands). I cut the top and bottom off, then cut it in half before peeling.
