Lots of AP questions!

I am most likely going to purchase an AP for myself since I am going to be in Orlando for a conference this year. I would like to use that when we go as a family in July. But how does this work? Do I book the room separately from the tickets? If I try booking a package online, it only gives you an option for tickets for everyone on the reservation, not just part of them.

I'd like to book the AAA discount, then apply the AP rate IF possible. I do not want to book through a AAA travel agent though. Will Disney apply the AAA discount if I call? And then can I call and apply the AP rate (IF there is one)?

I also read you could book up to 3 rooms with the AP. Do the rooms all have to be in my name and paid by me? Because I won't be occupying 3 rooms, my extended family is coming.

Once you have an AP, just book room-only. You can add the extra tickets you need when you arrive. There's an AP webpage where you can book AP rates if they're out (but you can't access that page until you have an AP or an AP voucher). If you book with an AAA discount through Disney, you can call and switch to AP rates when they come out, but only if the resort, room type, and dates are available for the AP discount. You'll get one discount or the other, but never both, by the way. And finally, the AP discount is for the AP holder only, you can't book for other people. My understanding is there needs to be an AP holder in each room.

However, please note that there aren't always AP rates.

2) You can book a ticketless AP package if you want the dining plan. You book the room with the AP rate (or rack if there isn't an AP rate), and add the dining plan for everyone in the room. You buy your tickets separately for the other members of your party. You can buy tickets from a discounter like Undercover Tourist if you wish.

3) You can book a room-only reservation with a AAA discount directly from Disney. Then you can change it to an AP discount if one comes out. You may have to be flexible with room type, resorts, or dates, though. You could also change it to a package with the AP discount as well.
