looking for yummy Mexican Appetizers Finger Food Recipes

We are having a house warming party in January and I want to have Mexican food - I am already going to be doing chips with salsa and guacamole but need some other ideas of easy finger foods that I could make - we are going to have about 50-60 people
 
I put this in the appetizer thread, but it fits here too...

Mini Taco's

buy Scoops brand tortilla chips
We like Taco Bell brand seasoning for the meat.
Prepare meat according to package
Top each individual scoop with meat, cheddar, tomato and scallion (or whatever taco toppings you like)

Everyone loves them and so simple....
 
Oh I thought of another recipe that I usually make in the summer, but you could make anytime. Marinate shrimp in garlic, olive oil, chili powder and cumin and grill....they are delish!

and squeeze fresh lime juice over them when they are done!
 
Bacon Wrapped Jalapenos

Fresh Jalapenos 2-3 Inches in size
1 8 oz package Flavored Cream Cheese - softened
1 package Bacon – cut into thirds

Cut Jalapenos in half, length-wise. With a spoon, remove the seeds and membrane. Spread a bit of cream cheese into each half. Wrap Jalapenos with a bacon slice and secure with toothpicks. *Note – at this point they can be frozen to cook later. Place them on a baking pan with a rack and bake at 375˚ for 20 – 25 minutes or until the bacon is done. Serve warm.

These things are awesome. Wear gloves to handle the jalapenos.
 
Other Ideas:

Make Cheese Quesadillas and cut into smaller wedges - or even squares like they do pizzas sometimes.

Beef or Chicken Empanadas: flatten a raw biscuit - top with taco spiced beef or chicken, and other desired fillings (refried beans, cheese, salsa...) fold over into half moon and seal and bake at 350 until golden.

Mexican Roll-ups: Lay a large flour tortilla flat, spread with cheeses, taco spiced meat or beans, salsa, guacamole, sour cream... whatever you like and roll up and cut into pinwheels.

Chili Cheddar Pinwheels
1 pkg (8oz) cream cheese, softened
1 cup (4oz) shredded cheddar cheese
1 can (4oz) chopped green chilies, drained
2 tbsp picante sauce
1/4 tsp garlic salt
1/4 tsp onion powder
2 tubes (8oz each) cresent rolls

In mixing bowl, beat cream cheese. Add the cheddar cheese, chilies, picante sauge, garlic salt, and onion powder. Separate each tube of cresent rolls into 4 rectangles.; press perforations to seal. Spread 1/4 cup cheese mixture over each rectangle. Roll up jelly-roll style, starting with the short side. Wrap in plastic wrap and chill for at least 1 hour.
Cut each roll into 8 slices, place on ungreased baking sheets. Bake 350 for 10-12 minutes or until golden brown.

If you're looking for more authentic, look for a recipe on Ceviche. Yummy and easy (though can be pricey depending on the seafood you use).

I've also read that Trader Joe's carries yummy bite sized tamales. Offer verde and red sauce dipping sauces.

For Tex-Mex, the chipotle chicken flautas at Costco are awesome! Not the ones in the freezer section, but the ones in the refrigerated deli/cheese/appetizer section. For parties, cook them and then cut them in half...half size is a perfect finger food size and it will go further. I serve them with a dipping sauce of salsa mixed with sour cream (though not remotely the right region, I tend to put in a dash of sriracha for interesting heat).

You can also dice pickled jalapenos, mix it with cream cheese, then spread on tortillas. Roll them up, and slice into rounds.

Other old stand-bys are 7-layer dip or jalapeno jelly over a block of cream cheese.

Edited to add: went to a party where they had corn and black bean salad. Very yummy. I believe the lady said it was a Rachel Ray recipe.

I love this idea! My kids love mexican food and will get a kick out of this.
 
Chile con queso (dip for tortilla chips)

2 cans of creme of cheddar cheese soup
1/2 bag of Kraft shredded mexican cheese blend (which is colby and jack cheese mixed)
1 can of rotel tomatoes
1/3 pound of browned hamburger meat (optional)
3/4 cup of chopped green chile (optional)

Heat on stove top until warm or cook in crock pot until hot. Eat with tortilla chips
 
Churros are popular, and there's always people serving a mexican fruit mix drink at the flea market. Jarritohs is a popular mexican soda that comes in all different kinds of fruit flavors.

And the base for anything mexican is a corn or flour tortilla, pinto beans and orange rice...
 
Simple, but so good! Spread refried beans on a round pie plate, add a layer of sour cream to cover, then add a layer of cheese. Bake till cheese melts! You can then add shredded lettuce, tomatoes, black olives, etc!
Or mix in crockpot 1 lb Velveta cheese cubed with a can of Rotel tomatoes and serve with scoops or tortilla chips after melted! :rotfl:
 
Pie plate - layer 8 oz cream cheese, then Hormel chili without beans, salsa and top with shredded mexican cheese put in microwave until cheese is melted and serve with tostitoes
 
Cold Bean Dip

1 can refried beans spread into the bottom of a serving bowl. Cover with Ranch Dip (Hidden Valley packet mixed with sour cream). Top with grated cheese, chopped tomato and sliced olives. Serve with Scoops. yum!
 
To go along with your guacamole on the chips, you can add some traditional mexican salsas to go with. They're pretty easy to make:

And if you'd like to serve something a little more complex but that is still fairly easy and quick to make, you could do my favorite, fish ceviche (recipe for it is on the same site listed above). a super tasty seafood dish popular in the coastal regions of Mexico that go great with chips and tostadas, which you should be able to find at your stores. People love that stuff at parties, especially in the winter months! Hope that helps ya. :)
 
Sorry - it's not hot food, but we've done individual servings of 7-layer dip in plastic margarita glasses before - it makes a lovely presentation!
