Hi. Just booking a very quick trip fin less than two weeks from now. If there perhaps a list somewhere of table service restaurants (NOT in the parks) that you wouldn't necessarily needs ADRs for? I'm thinking either Disney Springs or any of the hotels in WDW. It would be for a day we are not in the parks.

It's pretty easy to get a table in the bar area at STK and eat there. They serve the full menu.

Frontera and Homecomin both seem to have pretty good walkup availability during the week.
 

I was there June and July and was surprised how many ADR's were available the same day I searched. We even got a Via Napoli last minute.
 
It's also a good idea to check a day or two ahead. Most places have a one day cancellation policy so there can be lots of cancellations and openings around then.
 
Booking last minute is easier than going without. I don't know if this has changed since my last trip, but I've personally experienced being turned away as a walk-up only to hop on the app and book a reservation for an hour or so in the future. My guess is that because so few of the restaurants have decent space for people to wait around, they actively discourage walk-ups. But last-minute availability on the app can be surprisingly good.
 
By no means an exhaustive list, but these tend to have good to excellent availability for dinner the day of. As mentioned, it's best to check the app and make a reservation even if it's only 5 minutes ahead.

The Wave - Contemporary
Grand Floridian Cafe - Grand Floridian
Maya Grill - Coronado Springs
Trail's End - Fort Wilderness Campground
Garden Grove - Swan

There are lots of others that likely have availability on any given day, including
Artist Point - Wilderness Lodge
Jiko - Animal Kingdom Lodge
Boathouse - Disney Springs
Homecomin' - Disney Springs
Raglan Road - Disney Springs
House of Blues - Disney Springs
Whispering Canyon - Wilderness Lodge

Note: all of the above appear on the app as having availability for dinner around 7pm, today, Labor Day, 2017, along with a whole lot more.

The MK area resorts always seem to have something open at their less-than-signature restaurants. The Wave, Grand Floridian Cafe, Kona(ish - some times are harder than others), WCC. I don't know why. They're all really good!

ETA Citrico's at GF, which is a signature, also seems to have availability. See? I contradicted my own post!:thumbsup2
