Looking for pasta sauce recipe ideas.

I've been poking around various recipe websites but so far nothing has jumped out for me.

I plan to bread some chicken breasts and bake them (sorta like you would if making Chicken Parmesan) only I plan to put bruschetta on top.

I'm trying to find a nice garlic/oil/thin cream sauce recipe that would pair well with the tomatoes in the bruschetta.
I don't want alfredo or tomato based sauces...

Anyone have a good recipe or any ideas? DH and I love the scampi sauce Olive Garden uses.. so something along that line if anyone is familiar with the dish.

Appreciate any ideas. :)

Knorrs has a nice Garlic & Herb cream sauce packet that you add butter & milk to. I made some sun-dried raviollis and this tasted excellent on them. Real easy too. Your Chicken Breasts sound yummy too/
 
What about Spaghetti "ajo e ojo" which is Spaghetti with Garlic and Oil from The Classic Italian Cookbook by Marcella Hazan.

1/2 cup plus 1 tbsp olive oil
2 tsp very finely chopped garlic
salt
1 lb spaghetti
freshly ground pepper
2 tbsp chopped fresh parsley


While you are making the pasta, put the 1/2 cup olive oil, garlic and tsp salt in a small saucepan. Saute garlic over very low heat stirring frequently, until it slowly becomes a rich, golden colour. When pasta is cooked, drain, and put in large bowl and add the garlic and oil. Toss and add pepper, parsley and tbsp of olive oil. Serve.

They eat this as a midnight snack in Rome, or so I'm told.
