Hard to say as I don't know what your definition of "healthy" is and besides V&A's all Disney restaraunts are kid friendly.
If you are on a special diet all TS restaraunts will work with you to have food prepared in a way that is most "healthy" to you. For example, if you goal is to eat fish, they can simply grill it for you and leave off any sauces.
I'd say Ohana or Whispering Canyon Cafe...they both have activities where you can get up and dance or run around the restaurant to work off those excess calories.
As the above posted said pretty much any restaurant can make the dishes healthier for you by holding the sauces. Healthy is usually your choice based on what you order off of the menu.
I think you should be able to find something healthy at every TS restaurant. Even with kids you MAY be able to ask for something not on kids menu in a much smaller size.
Another suggestion, maybe a buffet like Crystal Palace or Chef Mickeys's. you can get fresh fruits & vegetables. Or, I don't know about the salt content, but Teppan Edo. they cook the food right in front of you.
