I'm being so psychic here when I say, don't roll your eyes at me Kara, but have you tried organic dairy? All those hormones in the milk can make girls get PMS/AF at 8 they say.

It might be worth it for a month or so to see if there is a mood shift.

And for the 3 night thing - the kids for whatever reason are homebodies. Nicolas started it at night 2 at WDW. i thought it was because Carlos wasn't there. Mia was all out of sorts about missing her room. Nicolas started at day 3 asking HOURLY if we could go home - he missed his "stuff" and his bedroom.

I'm okay with it, cause that just means when Mia is 4 or so we need to go back for a whole week.
We Bring Home things with us on vacation even if we are only going for a day or 2 like Pillow blankie and a few toys. I know it is extra to pack but I get home sick I can imagine how munchkins feel. I think 4 days for Disney will be great, but keep in mind traveling really does a number on you even more so with kids. Maybe 5 days would be a good compromise? Then just in case flights get delayed you can have an extra day built in and if you get that extra free time you can use it as a pool day!
Now keep in mind where we live, 3 nights really can be 4 full days. We can be on a plane at 5 am or 7 am and get there very early. Then we can fly out as late as 8pm I think. We might bump up to 4 but my gut is that the kids will be "done" by then. I just really think so based on this trip and the one before with Nicolas.
